Yes on both!! You will just need to use a couple of tricks and/or Add-Ons.
First of all, YAY for allowing your students to be Form CREATORS!!! How cool is it that you are empowering them to reinforce their own knowledge in such a way that they get to learn something new while they practice what they've already learned?!

The teachers are using my form, but when they go to the student responses on the Google Spreadsheet...the most current students added to the list are added to the bottom. I was hoping to be able to have all new students and entries at the top of the spreadsheet. Is that possible? I was able to arrange the sheet from Z-A using the date and time stamp category, but it doesn't seem to save that "sort setting". After I organize them, all of the new responses enter at the bottom of the time stamps.

Yup! There are a couple of different Add-ons that will do this. One of them, called Wizy Mail Merge & Doc Merge with Attachments, would work especially well for this.
